At what weight will the pigs be processed?

The target weight for each pig will be 210 pounds. This is not the ideal weight economically, but it is the ideal weight from a quality and flavor basis.

Who will process the pigs?

Keeping it close to home, we are currently reviewing small specialty processors located in Iowa. More details to come once we have made our final selection.
