  • 1 1/2 lbs. boneless pork and cut into 1-inch cubes
  • 1/2 lb carrots
  • 1 lb yellow potatoes
  • 1 lb Brussels sprouts
  • 1 onion
  • 1/2 cup ranch dressing
  • 2 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/2 tsp. dried thyme
  • 2 Tablespoons olive oil salt and pepper
  • 1 can (15 ounces) of black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained

Directions

  1. Preheat the oven to 420 degrees F (218 degrees C).
  2. Cut vegetables into bite-size pieces.
  3. In a small bowl, whisk together olive oil, garlic, salt, pepper, and dried oregano.
  4. Place the vegetables in a single layer on a large baking sheet.
  5. Put the oil mixture over the vegetables and toss to coat a layer.
  6. Roast in the preheated oven for 20 minutes.
  7. Remove the baking sheet from the oven and top it with pork chops.
  8. Return to the oven and roast until the pork chops are slightly pink in the center, about 15 minutes.
  9. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
